How to make Homemade Pumpkin Pie!

Last week we went on a Field Trip with my daughter's school to a Pumpkin Patch. We had so much fun learning all about the different varieties of pumpkins, going on a hayride etc.... We finally chose our pumpkin and went with a rather strange one that we were told is a  "Pie Pumpkin" which is off white in color and much smaller than those big ole orange ones most of us buy to carve or put on display in our yards. After much begging and pleading from the kids to make Homemade Pumpkin Pie, I finally went in search of a recipe and this is what I found. I don't know about you, but I have NEVER made a truly homemade Pumpkin Pie. I was perfectly content to pour the can of Libby's in to a bowl, add a few ingredients and call it my own.....however I was curious to give this a try. We had so much fun 1st cooking the pumpkin and then scraping it out of it's shell. The rest of the process was a bit messy with all of the mixing and adding ingredients, but we sure had alot of fun together and I dare say it is the best Pumpkin Pie I've ever tasted.
